Sukibhaji (Dry potato subzi)





Serves: 4 people

Cooking Time : 10 min.



Ingredients:


  • 4 / 5 Boiled potatoes
  • 2 green Chillies (Marcha)
  • 4 Curry leaves (Mitho Limado)
  • 1 tablespoon chopped coriander (Kothamir)
  • ½ teaspoon Sesame seeds (Til)
  • ¼ teaspoon Turmeric (Haldar )powder
  • ½ teaspoon lemon juice
  • 1 teaspoon Sugar
  • 2 tablespoons oil
  • ½ teaspoon Mustard seeds (Rai)
  • Salt to taste (½ teaspoon)

Cooking Method :

  • Keep green chillies, curry leaves, coriander, Sesame seeds and Turmeric in one bowl ready
  • Now cut the boil potatoes in pieces
  • Keep the gas on low flame
  • Prepare the tempering by heating the oil and the mustard seeds
  • Once sound starts coming, add the mixture of all and fry it for 2-3 seconds
  • Now add potatoes, sugar, lemon juice and salt to taste.
  • Mix it well
  • Leave it on gas for 5 minutes

Serving :

  • Decorated with cut coriander and serve hot
  • Serve with Roti or Puri
  • Taste good with Rice and Kadhi also
